Lunch - Asian Salmon Salad

Asian Salmon Salad

1 can wild Alaskan salmon (Paramount brand)
Asian baby greens or baby spinach
Chopped celery
Chopped cucumber
Snow peas or sugar snap peas
Chopped red capsicum
Fresh coriander
Grated ginger
Lemon or lime juice

Mix together all salad ingredients and top with grated ginger, lemon or lime juice (and tamari or soy sauce if wanted)

Serves 1

Still Hungry? 1 piece of wholegrain bread or cracker, fruit
