Moroccan Chickpea Salad

Ingredients
1 tin chickpeas, rinsed well and drained
2 tomatoes
Shallot or 1/2 red onion, sliced
1 red capsicum, cut into thin strips
½ cup chopped parsley
1 tablespoon chopped mint leaves
Iceberg lettuce, finely sliced

Dressing:
Tahini
Lemon juice
Olive oil
Crushed garlic
¼ teaspoon turmeric and cumin

Method
Mix salad ingredients together and serve with dressing

Serves 2
