Salmon with Polenta and Asparagus

Salmon with Polenta and Asparagus

Serves: 2

Ingredients: 

  • 1/2 cup finely ground polenta

  • 2 tsp extra-birgin olive oil

  • 1 garlic clove, minced

  • 1 tsp fresh thyme

  • 3/4 tsp salt

  • 1 and 3/4 cups water

  • 1/2 cup sun dried tomatoes, finely chopped

  • 1/3 cup grated Parmesan cheese

  • 450g salmon fillet, cut into two equal pieces

  • 1/4 tsp black pepper

  • 1 tsp lemon zest

  • 450g asparagus, ends trimmed and chopped into 5cm pieces

  • Juice of 1/2 a lemon


Directions: 

  • Place polenta, olive oil, garlic, thyme, salt and water into a large microwave-safe bowl. Microwave 2 and 1/2 minutes

  • Stir the mixture and heat for an additional 2 and 1/2 minutes until polenta has absorbed most of the water

  • Stir in the tomatoes and cheese

  • Cover and let sit

  • Place salmon in a microwave-safe baking dish and season with salt, pepper and lemon zest

  • Cover dish with wax paper, leaving one side slightly open to allow out steam

  • Microwave for 3 minutes

  • Check fish is cooked through, if not microwave in short intervals until soft and flaky

  • Place asparagus in microwave bowl with 1 tbsp water, cover with paper towel and microwavew for 2 minutes

  • Season with salt and lemon juice and serve with salmon and polenta
