Instructions
  1. Pre-heat oven to 180°C
  2. In a medium mixing bowl whisk eggs. Add mashed banana and whisk to combine.
  3. In a mixing bowl, combine almond meal, tigernut flour, baking powder and cinnamon. Add to wet mixture and combine.
  4. Pour batter into a lined loaf tin. Top with slices of banana.
  5. Bake in oven for 40- 45 minutes or until cooked through.
