cooked brown or long grain rice
Dressing

Salad

red capsicum

green capsicum

red onion (finely chopped)

frozen corn (defrosted)

tomatoes (water and seeds removed)

chopped coriander (1/4 cup chopped chives)
Instructions
Place all dressing ingredients in a jar and shake.
Place chopped salad ingredients and rice into a bowl. Drizzle with dressing.
Toss then serve!
